The deep purple pods will eventually mature to a crimson, and this is when the flesh is the sweetest, making a perfect balance to the good dose of capsaicin--50,000 Scoville units. The 4-7 inch long peppers undergo a chameleon-like change, making them a colorful standout for market display. The Buena Mulata is a pepper that is celebrated by connoisseurs for its refined flavor, and is held in especially high regard among African American gardening communities, as the pepper originated in the mid-Atlantic African American culinary scene of the early 1900s and was famously grown by folk artist Horace Pippin. We find this pepper well suited to cooking and especially tasty when blended into a hot sauce.
