BUCKWHEAT Fagopyrum
esculentum - Well known as a
cover crop, but equally important in food value. In Japan, a flour
derived from it makes delicious soba noodles, while Europeans make
tasty Kasha dishes. Buckwheat is naturally devoid of gluten, making it
a good choice for those on gluten-free diets. Can be substituted for
other grains in the brewing of beer. Buckwheat hulls make an excellent
filling for pillows; provides a natural alternative to those who suffer
with feather allergies. Medicinally, an infusion make with the
flowering tops may help with hardening of the arteries. Buckwheat likes
cool weather; best grown in the Fall. Height - 2-3 feet. Annual.

This wonderful chocolate substitute has long been used in health-food
bars, baking, and dog treats. Pollinated female trees produce long,
bean-like pods with sugary pulp and hard seeds inside. Fresh pulp is
soft, sticky, and tasty. A powder ground from dried pods can be used as
a substitute for chocolate. Carob is caffeine and stimulate free,
making it a good choice for those who prefer the flavor of cocoa
without the side-effects. Height - 40 feet. Perennial.

Salvia sclarea
- The lovely, aromatic flowers can be
soaked in water to produce a refreshing eye bath. Helpful in removing
foreign particles or mucous from the eye. Formerly used to season food,

upset stomaches. The essential oil contained within is used to perfume
soaps and cosmetics. Height - 2-3 feet. Biennial.

herbal sugar substitute has been favored in Japan since the 1970's.
Hundreds of times sweeter than sugar, but without the calories. The

well. Prefers hot climates; protect from cold if temperature drops
